Cooking in the Time of (not yet) Quarantine


It's a crazy world we're living in right now (I like to call it Bizarro World, for lack of another term). The kids are home all day (Marty works nights, cleaning the local government center - say a prayer for him) and the weather today is cold, with flurries. Add my recent leap from full-time reporting to a merry mix of part-time editing and freelance writing, and with my habit of overthinking, worrying, and stressing, I DID NOT WANT TO GET OUT OF BED THIS MORNING.

Then a miracle happened. Or not. Anyway, what did happen was I remembered something I'd read about making "pancake bites." When the stores were out of water, toilet paper, and bread flour (of all things; what are these hoarders doing, making papier-mache?), I grabbed pre-made pancake mix in case we wanted to bake something. Now I'm glad I did.


This 24-muffin tin weighs a ton. It came from my father-in-law Tom, who is the namesake of our Tommy. He'd told us it came from a cafeteria in the Bronx. It's indestructible and turns out the best muffins and cupcakes - and, apparently, the best pancake bites.

I mixed up a big batch of pancake batter (uh...four cups of mix, 2 and two-thirds cups of water) and divided it between all the cups. What you don't see above is the drips and dribbles that I whisked away with a wet towel. Then I added sliced bananas and walnuts, and chocolate chips. You could add anything - ooh, bacon comes to mind....

Into a 350-degree oven for 15-20 minutes, and Oh. Em. Gee.


Yes. Three are missing. Marty and I couldn't stop ourselves (cue the zombie-gnashing noises).

Make some. Then make some more. You won't want to stop.
